Singapore was a stop necessitated to get to Tokyo on the best (meaning cheapest) flights. Eileen had been here once or twice for work, maybe 15 years ago, but I had not, and we were both wanting a chance to see this city, and taste some of the amazing food.


Just a two night stop, so to make the most of it we jumped on the Big Bus, to get a view of the city. This is a good way to see things in any big city if you have just a few days available. We could see many of the different districts including Little India, Arab Street, Chinatown, The Boat Quay and others.


This is truly an international city and you can see this from all the food that is available. The Hawker stalls are everywhere, and you can find authentic food from around the world.


On our list for this short visit - Singapore Chili Crab. Cooked in a spicy sauce, it can be found in many places - each with its unique spices in the sauce. We had ours at “Holy Crab”, and it was incredible! In addition to the crab we had “Capricorn” corn kernels battered and fried with curry, and some “Scorched Vermicelli “. The crab comes with bao buns to help you scoop up the amazing sauce. Overall - Yummm!


After an early dinner we walked back to the Raffles Hotel to visit the Long Bar - home of the original Singapore Sling. The drinks were incredible. Keep in mind, Singapore is one of the most expensive cities in the world (another reason this was a two night stop) - two drinks each…about $120!


The hotel is beautiful - a colonial style hotel built in 1887. Visited by many of the rich and famous, including Queen Elizabeth, it is just a beautiful place.


Time to head to the airport. One last view of the iconic Marina Bay Sands from the taxi, and we are off to Tokyo - this will also be just a short stop and a chance to visit some old colleagues and friends.


A key learning on this visit - two nights is too few. So many areas to visit and so many tastes to try. A week - too long (it’s really expensive), so maybe four nights next time would be just right!
